grated lemon zest, plus 1 tablespoon lemon juice

Directions
- Step 1Combine strawberries, lemon zest and juice, and sugar in a medium saucepan. Bring to a boil over high heat. Reduce heat and simmer, stirring frequently and pressing strawberries on the side of the saucepan to mash, until temperature on an instant-read thermometer reads 220°F, 10 to 15 minutes.
- Step 2Cool to room temperature then transfer to a pint jar. Refrigerate up to 1 week.
